Setting the line width (on the Appearance panel) does control the thickness of the .rib lines; however, the line width was originally intended to be in pixels, and takes only integer values. The default line width is the minimum, so you could choose broader but not narrower lines. Of course in .rib files we can't deal with pixels, and must choose a world-coordinate size for lines. I guess we need to reduce the nominal size of a "pixel" (and to make it consistent between rendering lines as cylinders or flat polygons); maybe that could be an independent option when writing .rib files.
