See the description of "appearance" tags, which is in the manual.  For
example, you could write:

  appearance {
	material {
	   diffuse  1 .7 .3
	}
  }
  INST transform ...
    geom { SPHERE 1  0 0 0 }

to produce an orange sphere.  The "diffuse" attribute specifies the color
of any otherwise-uncolored surface.
